Cucumber & Avocado Soup
2
ripe avocados
2 English cucumbers, roughly chopped
1 cup sour cream
1 cup yogurt
1/4 cup chopped fresh chives
2 tsp fresh lime juice
2 tsp salt
1 small jalapeño, chopped
For
garnish
chopped cucumber
fresh chives, chopped.
Peel
and pit avocado. Combine all ingredients in a blender. Blend
until very smooth and chill for at least 4 hours. Garnish
with the chopped cucumber and chives for service
