Olbeksons Lemon Almond Biscotti

1 1/2 cup sugar
1 cup vegetable oil
3 tablespoons grated lemon zest
2 1/2 teaspoons baking powder
2 teaspoons vanilla extract
2 teaspoons almond extract
1/2 teaspoon salt
4 cups all-purpose flour
2 cups sliced almonds
Preheat oven to 350 degrees F.
With
the paddle attachment of mixer, combine eggs, sugar, oil,
zest, extracts and salt.
Add
the flour, baking powder and almonds and stir until the dough
forms. Turn out onto a floured surface and knead until smooth.
Make two logs and sprinkle the top with sugar.
Bake
about 30 minutes and let cool for 10 minutes.
Slice
into 10 pieces and bake again until crispy, about 20 minutes.
